
Scientists say the food dye that gives blue M&M’s their color may help prevent spinal cord injuries. In a study at the University of Rochester Medical Center, the compound “Brilliant Blue G” was found to block a chemical that kills healthy spinal cord cells.
That chemical often causes more irreversible damage to spinal patients than their original injury. The blue M&M dye was also found to improve motor skills in lab rats.
